Custard apple clafouti with cherry 
Clafouti is a baked French dessert of fruit. Traditionally black cherries, arranged in a buttered dish
and covered with a thick flan like batter. The clafoutis is dusted with powdered sugar and served lukewarm, sometimes with cream.

Ingredients:

  • Custard apple 1 ripe , flesh removed, stones discarded
  • Stone less black cherries 425 g, drained well
  • Sour cream 1/2 cup 
  • 1/2 cup cream
  • 1 egg
  • 2 tablespoons caster sugar
  • 1 teaspoon vanilla extract
  • 2 tablespoons plain flour
Method:
  1. Preheat grill on medium-high. Place tray 15-20cm away from heat.
  2. Lightly grease 4 small (1 cup) ovenproof dishes. 
  3. Divide cherries and custard apple flesh among the greased dishes. 
  4. Whisk the sour cream, cream, egg, sugar, vanilla and flour until combined.
  5. Pour mixture over fruit. Cook under preheated grill for 7-10 mins. 
  6. Serve dusted with icing sugar.
