Hot Fish Biryani

Hot Fish Biryani
Ingredients :
  • Fish (Rohu or your choice) - 600gm
  • Basmati rice - 2 cup
  • Turmeric powder - 1 tea spoon
  • Hot red chili powder -2 tea spoon
  • Cumin powder - 1 tea spoon
  • Ginger paste - 1 table spoon
  • Garlic paste - 1 table spoon
  • Onion - 2 medium(chopped)
  • Cardamom - 10 pieces
  • Cinnamon stick - 5/6 pieces
  • Whole cloves - 5/6 pieces
  • Oil
  • Ghee
  • Salt

Chicken Shawarma

Chicken Shawarma
Ingredients:
  • Pita Bread (if you cant find pita bread than you can use chapati or lavasa (the white roti)
  • Lemon Juice
  • Olive Oil
  • Chilli Powder
  • Chicken
  • Salt
  • Lettuce
  • Tomatoes
  • Coriander Leaves
  • Yoghurt/Curd
  • Oil
Method :
  1. Cut chicken into thin slices. Add little olive oil, little lemon juice, salt and if you want it to be spicy you can add chilli powder. Marinate them for 2 hours.
  2. To make sauce, put garlic paste, lemon juice(little), yoghurt/curd, salt to taste in a bowl. Mix these ingredients and there comes the yummy Shawarma sauce.

Ingredients:
  • Mutton-1 kg
  • Bashmati rice- 1/2 kg
  • Potato(cut in cube) - 3 medium size(around 250gm)
  • Onion - 1 cup(chopped)
  • Yogurt - 1 cup
  • Milk- 1 cup
  • Cinnamon stick -4 pieces
  • Cardamom-5-6 pieces
  • Clove-3-4 pieces
  • Bay leaf- 4 pieces
  • Garlic paste-1 and 1/2 Tbs
  • Ginger paste- 1 and 1/2 Tbs
  • Garam masala powder- 1 ts
  • Cumin powder- 1 ts
  • Red chili powder- 1 ts
  • Black pepper powder- 1 ts
  • Nutmeg powder (Jaifol)- 1/2 ts
  • Mace powder (jaiotri)- 1/2 ts
  • Aloobukhara/Dried prune-7-8 pieces
  • Raisin -10 pieces
  • Keora water-1/2 Tbs
  • Sugar-1 ts
  • Ghee- 1/2 cup
  • Oil- 2 Tbs
  • Salt- 2 Tbs or according to your taste

Ingredients:
  • Beef- 1 kg
  • Bashmati rice- 1/2 kg
  • Ginger paste- 2 Tbs
  • Garlic paste-2Tbs
  • Onion paste- 2 Tbs
  • Onion (chopped)-1 cup
  • Yogurt- 1 Tbs
  • Cumin powder-2 ts
  • Garam masala powder- 1 ts
  • Red chili powder- 1/2 ts
  • Black pepper powder-1/2 ts
  • Nutmeg powder-1/2 ts
  • Green chili- 8-9 pieces or according to your taste

Aloo Paratha

Aloo Paratha
Ingredients:
  • Dough:
  • 1 cup whole-wheat flour
  • 1/2 cup water (Use more as needed)
  • Pinch of salt
  • Potato Filling:
  • 2 medium potatoes
  • 1/4 teaspoon salt
  • 1/2 teaspoon cumin seeds (Jeera)
  • 1 chopped green chili
  • 2 tablespoons chopped cilantro (green coriander)
  • 1/2 teaspoon garam masala (optional)
  • 1/2 teaspoon amchoor powder (optional)

Masala Papad
Ingredients:
  • 2 plain papad, these are available in Indian grocery stores
  • 2 medium size tomatoes, seeded and diced in very small pieces, this should make approx. 1cup
  • 1/2 English cucumber, cut in very small pieces, it should be about ½ cup
  • 2 tablespoons cilantro finely chopped
  • 1 teaspoon ginger finely shredded, optional
  • 1green chili finely chopped, optional
  • 1/2 lemon
  • Approx. 2 teaspoon oil
Spice Mix for Garnishing
  • 1/2 teaspoon salt
  • 1/4 teaspoon black salt
  • 1/2 teaspoon dry roasted cumin seeds powder

Crispy Spinach Pakoras

 Ingredients:
Crispy Spinach Pakoras

  • 1/2 cup gram flour (basen)
  • 1 tablespoon corn starch (arrow root powder)
  • 1/2 teaspoon salt adjust to taste
  • 1/2 teaspoon cumin seeds (jeera)
  • 1/4 teaspoon black pepper
  • 1/8 teaspoon asafetida (hing)
  • About 3/4 cup water
  • About 30 fresh spinach leaves
  • Oil to fry

Method:
  1. Mix all the dry ingredients together: besan, corn starch, black pepper, cumin seeds, asafetida, and salt. Corn starch adds to the crispness.
  2. Add the water slowly to make a smooth batter (batter should be thin consistency).

Ingredient:
  • 2 1/2 cups corn kernels
  • 2 cups milk
  • 1 tablespoon all purpose flour (maida or plain flour)
  • 1/2 cup finally chopped red bell pepper (capsicum or shimla mirch)
  • 1 tablespoon oil
  • 1/2  teaspoon cumin seeds (jeera)
  • 1/4 teaspoon black pepper
  • 1 teaspoon salt
  • 1 teaspoon lemon juice
  • 2 tablespoons shredded parmesan cheese or Italian mix cheese
  • For Garnish
  • 1 seeded and minced green chili
  • Some fresh cilantro leaves
  • Bread of your choice (I like French or sourdough bread)

Ingredients:
  • 1 cup chickpeas (Garbanzo beans, Kabuli chana)
  • 1 medium size boiled potato
  • 2 tablespoons oil
  • 1/4  cup gram flour (besan)
  • 1 tablespoon finely grater ginger
  • 1 seeded minced green chili adjust to taste
  • 1 1/2  teaspoon salt adjust to taste
  • 1 teaspoon black salt (kala namak)
  • 1/2 teaspoon black pepper
  • 1 teaspoon roasted cumin powder*
  • 1 teaspoon mango powder
  • 1 tablespoon garam masala
  • 1 tablespoon lemon juice

Chola Tikki

Chola Tikki
Ingredients:
  • 1 cup of boiled chickpeas (kable chana)
  • 3 medium potatoes
  • 1 tablespoon shredded ginger
  • 1 tablespoon chopped cilantro (hara dhania)
  • 2 chopped green chili seeded, adjust to taste
  • 1/2 teaspoon black pepper
  • 1 teaspoon salt
  • 1 teaspoon lemon juice
  • Oil to shallow fry

Bread Potato Roll
Ingredients:
  • 4 bread slices, bread should be firm
  • 2 medium size potatoes boiled peeled and mashed this will make about 1-1/4 cup mashed potatoes
  • 1/4 cup green peas boiled
  • 1 teaspoon oil
  • 1/4 teaspoon cumin seeds
  • 1/2 teaspoon salt
  • 1/8 teaspoon red chili powder
  • 1/2 teaspoon mango powder
  • 1 tablespoon finely chopped cilantro
  • 1 green chili minced; adjust to taste
  • 1 teaspoon finely chopped ginger
  • Oil to fry

Bread Pakora
Ingredients:
  • 4 slices of firm white bread
  • 1 cup gram flou 1 tablespoon rice flour
  • 1 teaspoon salt
  • Pinch of asafetida
  • 1 teaspoon cumin seeds
  • 2 finely chopped green chilies
  • 1/4 cup chopped cilantro
  • 1/2 cup & 2 tablespoons of water
  • Oil to fry

Asparagus With Ginger

Asparagus With Ginger
Ingredients:
  • 1 bunch of asparagus, approx. 1 pound
  • 2 tablespoons olive oil
  • 1 teaspoon cumin seed (jeera)
  • 1 tablespoon minced ginger
  • 2 teaspoon lemon juice
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
Method:
  1. Holding the stalk at both ends, bend gently until it breaks on its own.  Discard the hard portion of the stalk.
  2. Cut the remaining asparagus spears diagonally into 2 inch pieces.
  3. Bring oil to medium heat in a large frying pan that can hold all the asparagus.
  4. Add cumin seeds and wait till they crack. Then add asparagus, ginger, lemon juice, salt and black pepper.
  5. Stir-fry for about 4 to 5 minutes until asparagus are tender but still crunch.
  6. Serve hot or at room temperature.

Plain Rice

Plain Rice
Ingredients:
  • 1 cup Basmati rice or long grain rice
  • 2 cups water
  • 1/2 teaspoon salt
  • 1 teaspoon oil
Method:
  1. Wash rice gently changing water several times until the water appears clear.
  2. For fluffier rice, the rice should be soaked for at least 15 minutes prior to cooking.
  3. Cooked rice expands to about 3 times its original size, so be sure to use the proper size pan.

Paratha

Paratha
Ingredients:
  • 1 cup whole wheat flour
  • 1 teaspoon oil
  • 1/2 teaspoon salt
  • Approx.1/2 cup water lukewarm
  • 1/4  cup whole wheat flour to help rolling
  • Approx. 2 tablespoons oil for cooking
Method:
  1. In a bowl mix the flour, salt, and oil. First add about 1/3 cup of water to make dough add remaining water as needed to make smooth and pliable dough. Knead the dough on a lightly greased surface.
