Lemon cheesecake

- For the biscuit base:
- 10 digestive biscuits
- 75g/3oz butter, melted
- 1 tbsp clear honey
- For the filling:
- 700g/1½ lb mascarpone cheese
- 2 lemon, juice and zest
- 200g/7oz caster sugar, plus more to taste
- 4 tbsp icing sugar
- mint, to garnis
- For the sauce:
- 450g frozen summer fruits, defrosted
- icing sugar, to taste

- For Sponge Cake:
- Large eggs - 2 + 2
- Large egg yolk -1 (** we will not use the whites of this egg)
- Sifted cake flour -1/3 cup (35 grams)
- Cornstarch (corn flour)- 3 Tbs (30 grams)
- Granulated white sugar (divided)- 1/2 cup (100 grams)+ 1 Tbs (15 grams)
- Vanilla extract -1 ts
- Cream of tartar- 1/4 ts (optional)
- Salt - 1/4 ts
- Confectioners sugar - 4 Tbs (to sprinkle on the top of the cake)
