মালপোয়া
উপকরণসমূহঃ
  • ২৫০ গ্রাম তরল দুধ
  • ১০০ গ্রাম ময়দা
  • ঘি বা তেল
  • চিনির সিরাপ
  • লবণ
প্রক্রিয়াঃ
  1. একটি কড়াই নিয়ে তাতে পানি গরম করুন।

Khejur Pitha

Khejur Pitha
Ingredients:
  • Semolina/Shuji- 1 cup
  • Flour -1/2 cup
  • Egg- 1
  • Sugar - 1/4 cup or your taste
  • Salt - 1/8 ts
  • Clarified butter/Ghee/oil- 1 Tbs
  • Baking powder- 1/4 ts
  • Warm milk- 4 Tbs
  • Oil - for deep fry
Method:
  1. Take shuji, flour, sugar, salt, baking powder and ghee in a large bowl, and mix it well.
  2. Now add the egg and knead the dough. If dough is too dry spread milk and knead it. Dough must not be too dry or too soft. It should be soft enough so that you can make balls with that. If it is not necessary do not use milk.
  3. Make small balls from the dough.

Moong Pakan Pitha

Moong Pakan Pitha
Ingredients :
  • Rice flour-1 cup
  • Moong dal-1 cup
  • flour-2 Tbs
  • Egg-1(beaten)
  • Cardamom-3/4 pieces
  • Sugar-1 cup (for sirap)
  • Oil for deep fry
  • Salt-1 ts or your choice
Method:
  1. Grind cardamom seeds and keep aside.
  2. Wash dal. Place 3 cup water into a deep pan. Add dal to the water and boil until it become soft, then stir it continuously to make it paste. If needed add more warm water. When dal become thick and water reduced add rice flour,grind cardamom,flour and salt, mix it continuously. When it become dry enough to make dough, remove from the pan into a mixing bowl. It should not be too soft.

Nakshi Puli

Nakshi Puli
Ingredients:
  • For filling:
  • Grated coconut- 2 cup
  • Sugar- 1/2 cup or your choice
  • Clarified butter/ghee/oil-1/2 Tbs + 2 Tbs
  • Salt-1/4 ts
  • Cardamom-2 piece
  • Cinnamon-1 stick
  • Bay leaf-1 piece
  • clove-2 piece
  • Flour- 1 cup
  • Salt-1/2 ts
  • Warm water- approximately 1/2 cup or less
  • Food color-1/2 ts(dissolve in 1 ts water)
  • Oil- for deep fry

Deep Fried Puli Pitha

Deep Fried Puli Pitha
Ingredients :
  • Coconut-1 cup(grated)
  • Date jaggery(gur)/Sugar-4/5 Tbs(for filing)
  • Sugar-1/2 cup(for dough)
  • Rice flour/all purpose flour(maida)-1 cup
  • Cardamom powder-1/2 ts
  • Salt-around 1 ts
  • Oil-for deep fry
Method:
  1. Heat a pan in medium heat. Add coconut and date jaggery(gur)/sugar. Stir around 5 minutes. Add cardamom powder and stir until it become little sticky and thick consistency. Remove from the pan and set aside.

Patichapta Pitha

Patichapta Pitha
Ingredients:
  • For Kheer:
  • Milk-2 liter
  • Sugar-1 cup or your choice
  • Coconut-1 cup grated(if you want only milk kheer don't add coconut)
  • Oil-around 2 Tbs
  • Salt-1/4 ts
  • For Batter:
  • Rice flour-1 cup
  • Sugar-1/4 cup
  • Milk- around 2 cup(warm)
  • All purpose flour-2 Tbs
  • Egg-2(beaten)
  • Oil- around 2 Tbs to brush the pan.

Lobongo Lotika Pitha

Lobongo Lotika Pitha
Ingredients:
  • Grated coconut- 2 cup
  • Sugar- 1/2 cup or your choice
  • Butter/ghee/oil-1/2 Tbs + 2 Tbs
  • Cardamom-2 piece
  • Cinnamon-1 stick
  • Clove-10-15 pieces
  • Flour- 1 cup
  • Salt-1/2 ts
  • Warm water- approximately 1/2 cup or less
  • Oil- for deep fry

Egg Pitha

Egg Pitha
Ingredients:
  • Egg-2
  • Flour-2 cup
  • Sugar-2 and 1/2 Tbs
  • Water-1 and 3/4 cup
  • Salt-1/4 ts
  • Oil-1 Tbs for egg fry + deep frying
Method:
  1. Mix flour,sugar and salt. Add water and mix well. Keep the batter aside.
  2. Heat 1 tbs oil in a pan in medium heat and make egg fry(ডিম পোঁচ).
  3. Heat Oil in a pan in medium heat for deep fry. Dip fried egg in the batter and put in the heated oil. Fry both side until golden brown.
  4. Remove it from oil to a paper towel to remove extra oil. Again dip it in the batter and fry it. Repeat this process for 4-5 times. 
  5. Cut with a knife  and serve.

Pakan pitha

Ingredients:
Pakan pitha
  • Ripe banana- 1
  • Rice flour-1 cup
  • Flour- 1/4 cup
  • Sugar-5 Tbs or your choice
  • Baking powder-1/2 ts
  • salt-1/8 ts
  • Water- around 2/3 cup
  • Oil- for deep fry
Method:
  1. Peel the banana and mashed it smoothly.
  2. Take rice flour, flour, sugar, salt, baking powder in a bowl and mix them well to distribute all things evenly.
  3. Now take the mashed banana in a mixing bowl, add the dry ingredients small amount at a time and knead them. Add water slowly and make it like a dough consistency. Knead the dough well to make it smooth and lump free. Then keep the dough to rest for about half an hour or more.
  4. Divide the dough to small balls. Brush little oil on a plate, take a ball and press it on the plate to make it around 1/2 cm oval shaped disk(like shown in the picture).
  5. Heat oil in a medium high heat. When oil is heated enough put one pitha into the oil. If oil is heated perfectly then pitha will remain in the bottom for few seconds and then puffs up. When it puffs up flip the side and fry few seconds and then take out on a paper towel to soak the excess oil.(don't fry pitha too much, otherwise it will become hard)
  6. Fry all the rest of pitha in the same process and serve hot. 

Note:
  • When pitha become cool it may be seems little hard to eat. At that time boil some water in a pan, put a steamer on the pan and place your pitha on it and cover it. Steam your pitha around 5-8 minutes and then take out and enjoy.

Puli Pitha

Ingredients:
  • Coconut-2 cup
  • Jaggery/sugar-5-6 Tbs or according to your taste
  • Cardamon powder-1/4 tsp (optional)
  • Rice flour-1 cup
  • Salt-1/4 tsp

Bibikhana Pitha

Bibikhana Pitha
Ingredients:
  • Rice flour-2 cup
  • Egg-4 pieces(beaten)
  • Coconut-1 cup(grated)
  • Sugar-1 cup or according to your taste
  • Powder milk-3/4 cup
  • Ghee-3/4 cup
  • Cardamon powder-1/2 ts
  • Water-1 cup
  • Raisin and pista-few pieces for garnish
  • Ghee-1 Tbs for brush the baking pan

Teler Pitha

Teler Pitha
Ingredients:
  • Rice flour-1 cup
  • Atta flour-1/2 cup
  • Jaggery  (grated) / Brown sugar-3/4 cup or according to your taste
  • Salt-1/4 ts
  • Oil- for deep fry
Method:
  1. Soak jaggery with little warm water and mix well. There should not be any lumps.
  2. Put rice flour and flour to a mixing bowl. Mix well. Add jaggery and knead well. Add little warm water and make a batter. The batter should be thick like cake batter. Cover the bowl and keep it around 30 minutes.
  3. Heat oil in a deep pan. Take a deep round shape spoon. When the oil become hot enough take a spoon full batter and add to the oil.
  4. If oil is heated perfectly then pitha will remain in the bottom for few seconds and then puffs up. When it puffs up flip the side and fry.
  5. Then take out on a paper towel to soak the extra oil.

Kolar Pitha

Kolar Pitha
Ingredients :
  • Ripe Banana -1
  • Rice flour - 3/4 cups
  • Flour - 2 Tbs
  • Egg -1
  • Jaggery- 5 Tbs or to your taste (soaked in around 1/2 cup of water)
  • Sugar - 1 Tbs (optional)
  • Salt - 1/4 ts
  • Baking powder - 1/4 ts
  • Oil - to deep fry

Chita Pitha

Chita Pitha
Ingredients :
  • Rice flour-1 cup
  • Water-2 cup
  • Oil for brush the pan
  • Salt-1/2 ts or according to your taste
Method:
  1. Place rice flour to a bowl. 
  2. Add water and salt to the rice flour. 
  3. Mix well. Keep the batter aside.
  4. Brush oil in a pan. Heat in medium. 
  5. Spray batter on the pan with your hand.
  6. Wait for few seconds. 
  7. Then remove from the pan carefully. 
  8. Every time you just mix the batter with your hand before spray.
  9. Enjoy with chicken curry.

Vapa Pitha

Ingredients:
  • Rice flour -2 cup
  • Warm milk or water-1/2 cup
  • Salt- 1 ts
  • Sugar- 2 ts
  • Shredded coconut - 1/2 cup
  • Shredded Jaggeryr- 1/2 cup
Needed accessories:
  1. Vapa pitha making pan
  2. (if you do not have the pan, take a saucepan with lid and some aluminium foil; and follow the alternate way described in the below )
  3. Small bowl
  4. One piece of cloth
