Nests with Jelly Beans

Ingredients:

• Chow mien noodles 2 cups (boiled)
• Corn syrup 1/4 cup
• Sugar 1/4 cup
• Peanut butter 1/4 cup
• Jelly beans 16

Method:

1. Break noodles into small pieces.
2. Combine sugar and corn syrup in a pan.
3. Cook on medium heat until the sugar is dissolved and there are bubbles at the edge of the pan.
4. Add peanut butter and stir until smooth.
5. Pour peanut mixture over noodles; mix nicely to coat completely.
6. Let cool.
7. Grease hands with butter and use approx 1/4 cup mixture to form a compact ball.
8. Use your finger to make a hole in the centre of each ball like a bird’s nest.
9. Set on butter paper and let cool.
10. Place 2-3 jelly beans inside each nest.
11. Spread green-tinted coconut on serving platter and place nest on bed of coconut and serve.
