Strawberry Cornflake Flan |
- For Base:
- Cornflakes crushed 2 cup
- Butter 3 tbsp
- Sugar 2 tbsp heaped
- Honey 2 tbsp
- For Filling:
- Egg 1 separated
- Cream whipped 1 cup
- Strawberries puree 1/2 cup
- Milk 1, 1/2 cup
- Flour 1 tbsp
- Gelatin 2 tsp heaped
- Sugar 6 tbsp
Method:
- For Base:
- Melt butter and add in sugar and honey, remove from heat.
- Mix in crushed cornflakes.
- Grease an 8 inches pie dish and line it with corn flake mixture, pressing well on all sides.
- For Filling:
- Mix milk with flour, sugar and 1 egg yolk, mix well.
- Cook mixture on very low flame, stirring continuously till thick.
- Remove and cool.
- Add in it strawberry puree.
- Dissolve gelatin mixture in some water.
- Beat 1 egg white till stiff with 1 ounce extra sugar.
- Also beat fresh cream till stiff.
- Fold beaten egg white and whipped cream in the cooled custard, mix well.
- Pour over the base of cornflakes and chill till firm.
- Garnish with fresh cream and strawberry slices.
